    Whisk or shake rice vinegar, soy sauce, sesame oil, grated ginger, minced garlic, honey/maple syrup, Sriracha (if using), and lime juice in a bowl or jar. Slowly drizzle in olive oil until emulsified. Season with salt and pepper to taste.

    Wash and dry mixed greens. Slice bell pepper, shred carrots, slice red onion (optional: soak in ice water for 10-15 mins to mellow, then drain/pat dry). Chop cilantro. Optional: Toast chopped cashews in a dry skillet over medium-low heat for 3-5 minutes until fragrant; cool.
  4. Step 4
    In a large bowl, combine mixed greens, shredded carrots, sliced red bell pepper, and red onion. Add prepared chicken and chopped cilantro. Toss gently.
  5. Step 5
    Pour about half to two-thirds of the dressing over the salad ingredients. Toss thoroughly to coat. Just before serving, sprinkle in toasted cashews and crispy wonton strips/chow mein noodles. Toss gently once more. Garnish with sesame seeds and extra cilantro (optional). Serve immediately.
