Instructions

  1. Step 1
    Lay out 4 slices of bread. Evenly spread softened butter or mayonnaise on one side of each slice. Set aside two buttered slices for the top.
  2. Step 2
    Place the remaining two unbuttered bread slices on your work surface (these will be the bottom halves). Divide half of the mozzarella and half of the Parmesan cheese evenly over these two slices. This cheese acts as a barrier for the sauce.
  3. Step 3
    Spoon 2 tablespoons of warmed pizza sauce onto the cheese layer of each sandwich, leaving a small border (¼ to ½ inch) around the edges. Sprinkle with garlic powder and Italian seasoning. Distribute 6 slices of turkey pepperoni evenly over the sauce on each sandwich.
  4. Step 4
    Top each sandwich with the remaining mozzarella and Parmesan cheese.
  5. Step 5
    Carefully place the reserved two buttered bread slices on top of each assembled bottom half, butter-side up. Gently press down on each sandwich with your palm to secure the layers.
  6. Step 6
    Preheat a large heavy-bottomed skillet or cast-iron pan over medium-low heat. Place the sandwiches butter-side down into the pan. Cover with a lid and cook for 4-6 minutes, or until the bottom is a deep golden brown and crispy.
  7. Step 7
    Carefully flip each sandwich. Cover again and cook for another 4-6 minutes, or until the second side is golden brown and the cheese inside is fully melted and gooey. For extra crispness, you can remove the lid for the final minute.
  8. Step 8
    Remove sandwiches from the pan and let them rest on a cutting board or wire rack for 1-2 minutes. Slice each sandwich diagonally in half with a serrated knife. Garnish with fresh basil (if using) and serve immediately for peak enjoyment.
